Year of 2019

Year of 2019 started very busy and I realized so many good and bad things happened , not only that some of my beloved ones, people I love, left me and heaven is their new home, but  also my very closest ones lost their family members and it hurts me for them, but also  I saw the true faces in friendships and relationships. I’m not very good in writing so please excuse me in advance. I took good quality of time thinking about what I want achieve this year and in my near future. I set my goals for many great things to happen. One of my greatest goal is put together all my best recipes and create book for my family ,all of my friends and coworkers. I’m working on this baby from  February and I can tell you, it’s not that easy to choose from so many great yummmi tummy recipes, but so far I created about 60 pages of this book. It’s  gona be mixture of multiple cultures  I experiencing while I do my researches or cooking for my family, friends and strangers lol... Some very heal

Cajun Shrimp bites

1 Lb. shrimp Mini wonton wrappers Shredded Mexican cheese blend 2-3 garlic cloves minced Juice from 1 lime Cajun seasoning chili powder cayenne pepper Toppings: lettuce tomatoes green onion avocado cilantro Cut shrimp in small pieces and put them in bowl, add lime juice and let them marinate a while you're preparing the rest of items. Preheat oven to 350F Mix all seasoning together, add to the shrimp ( you don't have to add all of seasoning if you don't like spicy or children involved). Make sure all shrimps are coded in that mixture. Place a wonton wrappers in cupcake baking sheet, spoon in the wrappers the shrimps, top with cheese. Bake  for about 10min , depending on your oven, until cheese is melted. Ones you take it out of oven and put on your plate add any toppings you like. Enjoy!

Plantains chips

3   green plantains (unripe and firm to the touch) 1/2   teaspoon   salt Oil for frying   Peel the plantains and Cut off both tips of and remove the entire skin with your hands. Slice the plantains into chips using a mandolin slicer or just cut thinly with a knife. Place oil in a deep pan up to 4 inches high.  Heat the oil on high. Carefully put the sliced plantains in the oil and gently  stir, let  them fry in the oil for about 5 minutes till golden brown. After that, remove the chips and place on paper towel to absorb excess oil. Once the chips are cold, enjoy!  You can put salt on them and if you like sweet then sugar, cinnamon. You can store chips in airtight container or Ziploc bag. Notes: Slightly ripe plantains are ok, but make sure they are still firm to the touch , otherwise they won't turn crispy.
