Home made roll - bun (Czech Rrep.)
1.1 lb (500 g) flour 1.5 oz (50 g) lard 0.5 oz (12 g) salt 0.7 oz (20 g) live yeast ( dry yeast is good as well) 2 ¼ cups (275 ml) milk Ingredients to finish: Coarse salt, caraway seeds, poppy seeds, sesame seeds, celery salt..what ever you like Place all ingredients into a bowl and work into a velvety dough.Let dry yeast go into low warm water for 2min,then add to bowl. Kitchen aid set to the lowest setting will take about ten minutes – if working by hand, it will take a bit longer (you will need lil more flour extra).. Place the dough on a rolling board and divide into 4 same size pieces (weighting approximately 7.5 oz). Roll each piece into a ball and allow them to rise (to rest) in a warm place for about 30 minutes under a tea towel or plastic wrap.I let it rest on patio table by sunny day. Work each ball of dough into a bun(any form you want) and finish up that is leave them to rise under a cover, glaze with water, sprinkle and bake by 450F about 15
