I'm going to take
you through the process of making homemade a sourdough bread, this recipe takes
some time, but it is a simple one and for those of you, who do not have
food scales it's perfect, because we are going to with measuring cups
so let's get it to it it's just a long process.
Ingredients:
4 cups of flour (bread
flour, wheat flour…)
1/4 cup active
sourdough starter
2 teaspoons fine
ground sea salt
1 1/2 cup filtered water or bottled water
Steps:
1.
Pour 1 ½ cups of filtered water into bowl with ¼ cup of starter
2. Mix it well together
3.
Add 2 teaspoons of salt, mix it up into the starter liquid
4.
Add 4 cups flour and plus 2 tablespoons of flour
5.
Knead all together, this just needs to come together, just making
sure that it's all gathered up

Let it rest for 1h

“Strech and a fold” start our first stretch and fold divide your bowl
into four quarters and you will grab one side of the dough, you will stretch it
out and you'll fold it on top the dough, then you will turn your bowl one
quarter clockwise or counterclockwise, whichever one you want and then you once
again stretch the dough out and you fold it over and then you turn your bowl again
stretch it up and fold it over until you have gone full circle, once you have
completed your last stretch and fold you will cover your dough with your lid or
plastic wrap and let this dough rest for 30min, again perform the exact same
procedure and then you're going to cover your dough and let it ferment for 7-10
hours

After 7-10 hours we're going to take it out to shape it into a little ball
and let it rest one more time 1h before we stick it into the oven (rise
overnight is the best option while everyone sleeps, and no need watch the
timing)

Pull the dough out of the bowl turn your dough out onto a floured
surface, we're going to shape it into a little ball so you're going to, pretend
that your dough has four corners and you're going to grab two opposing corners
and you're going to be pulling them towards each other so you're going to do
that on one side and the other two corners.
10. Take your dough and
flip it over with the seam side, you're going to carefully try to shape it into
a circle you can put your hands on either side of your dough and kind of tuck
and roll the ball towards yourself
11. Grab some parchment
paper, going to cut out a piece hat's a little bit bigger than dough and put
onto the parchment paper and put it back into the bowl and cover
12. Let it rise more

13. 30min before your
dough is finished rising, you're going to turn on to 450 degrees, but you're
take 2 ice cubes and put them into the Dutch oven, this is a neat little trick
to help create lots of steam inside of the Dutch oven that helps your bread
rise once the oven is heated
14. Take out the dough
and now it's time for scoring with a sharp razor blade
15. Pull out your Dutch
oven very carefully using oven mitts or silicone gloves if you have them your
Dutch oven is going to be extremely hot be very careful and put the whole bread
in the Dutch oven open the oven and put it in
16. Baking for 20min,
after that take off the lied off and bake another 30min
I added cheese, jalapeno for my own desires, don't
be afraid add what you like in your own bread!
