Chocolate Pavê or Tiramisu

CHOCOLATE LAYER

20-25 ladyfinger biscuits 
tablespoon Rum 
2 cups whole milk (organic if you can or local)
1 cup cocoa powder

CREAM LAYER

2 15oz cans sweet condensed milk any
4 cups whole milk (organic or local)
2-3 tablespoons corn starch , depending how big is your spoon
4 egg yolks

I also add sometimes mascarpone layer to make it more fun and extra secretly fluffy for the taste. As you can see the pictures below.
You can play with the layer as you want, its fun, its yummier and very delicious dessert.

WHIPPED CREAM 

2-3 cups heavy cream, basically no limit on heavy cream 
1/2 teaspoon pure vanilla extract or vanilla paste

INSTRUCTIONS 

  1. In a large pot combine the condensed milk and 3 cups of the milk.
  2. Dissolve the corn starch in one cup of milk and add to the pot. So you have left 2 cups milk. I did ones mistaken to add another cup of milk and it become to liquidly.
  3. Cook that mixture over low to medium heat, stirring constantly, until it starts thickening and its no longer liquid.
  4. Separate a cup of the mixture and let it cool.
  5. Add the egg yolks to the cooled cream, mix it well and return it to the pot.
  6. Cook until it thickens. Stirring and starring.
  7. Let it cool and pour into a 15x10 baking dish or any nice decorative galss dish as i did on the picture, stir in sometimes to avoid crust on the top of the mixture.
  8. Place the biscuits into a large bowl and the Cognac into another smaller bowl. Using spoon, sprinkle the Cognac over the biscuits.
  9. In the same pot you used for the cream, add 2 cups of milk and 1 cup of cocoa powder. Cook until it resembles hot chocolate. (Do not let it thicken. It's supposed to be a liquid mixture, and not a cream!) Or what i do if i want have very chocolaty taste I do shred entire dark chocolate and use that, she will melt on the cream eventually creating crunch layer.
  10. Cover and refrigerate overnight.
  11. On the next day, make some whipped cream by mixing the heavy cream and the vanilla extract.
  12. Pour the whipped cream into the dish, creating a layer.
  13. Refrigerate for at least 1 more hour before serving.
  14. Grate or shave some chocolate on top of the pavê.
  15. Serve cold.
You can as well use cold expresso caffe for the tiramisu taste.
